When I first moved to Spain in 2010, I was searching for a slower, more meaningful way of living after years of chasing a fast-paced version of the American Dream. What I didn’t expect was how deeply food — and the lack of access to it — would shape my experience here.
At the time, I had 26 food allergies. Navigating dietary restrictions in Spain fifteen years ago was very different from today. Awareness around food allergies was limited, ingredient lists were rare, and “I can’t eat that” was often understood as “I just don’t like it.” Ordering a meal meant long conversations, careful explanations, and, a very frightening order mix-up that ended in a late-night trip to the emergency room.
Over the years, through healing, learning, and a lot of patience, I’ve been able to overcome most of my food allergies. Still, the challenge never fully disappeared. When family members and friends came to visit — many with allergies, intolerances, or specific dietary needs of their own — I found myself reliving the same struggle: not just finding something to eat, but finding places where we could all eat together.
And that’s when it became clear to me:
Food isn’t just about nourishment. It’s about connection.
I believe deeply that food should bring people together, not separate them. No one should feel like the difficult one at the table. No one should have to choose between their health and sharing a meal with the people they love. Above all, no one should miss out on experiencing a country’s culture simply because their needs fall outside the “standard” menu.
That belief is what inspired Everyone Eats.
These tours were created to make space — for different bodies, different needs, different comfort levels, and different ways of traveling. Whether that means adapting a tour for dietary restrictions, mobility needs, or simply offering a quieter, self-paced experience, the goal is always the same: to make people feel welcome, included, and at ease.
Here, we focus on naturally inclusive foods, traditional kitchens, seasonal ingredients, and real stories — not specialty restaurants that isolate, but shared spaces where everyone can belong. Travel is — after all— at its best when it’s restful, thoughtful, and shared.
With a little planning and care, incredible food and meaningful experiences can be accessible to everyone. At the end of the day, when everyone is able to sit at the same table — laughing, learning, and enjoying the moment — that’s when the real magic happens.
